For far too long, Carob has had to take a backseat to its more popular and desirable counterpart – Cocoa/Cacao. Too often considered the disappointing second choice for those not able to eat traditional Chocolate.
Carob comes from a pod of a tree of the same name, which is in the legume family and native to the Mediterranean. The ripe pods, considered a fruit, contain a sweet pulp that is dried, roasted, and then ground into a powder. It offers an earthy, naturally sweet, and aromatic caramel flavour, making it excellent for baking, cooking, smoothies, and no-bake recipes. Carob can be used as a thickener, as well as a 1:1 substitute for cocoa.
